Since arriving in Sydney in 1999, Simpson has dazzled at Aqua Luna, while making regular appearances on television programs including Channel Seven’s Sunrise and My Restaurant Rules. His interpretation of deliciously simple and rustic Italian style using only the finest ingredients, with an emphasis on freshness and rich flavours.
Together with Wild, Simpson will be joined in the kitchen with bistro 3’s Head Chef, R ebecca Sanders and Sous Chef, Alex Drobysz.
Complimented by the highly polished floor team led by Nick Winter and Guy Holder, this will be a night to remember. W ith the bistro 3 team, Simpson will be given free reign to create a signature menu that w ill include some of the finest produce available in Tropical North Queensland
